Creamed Spinach

Ingredients
- 2 pounds fresh spinach, washed and trimmed
- 2 tablespoons Anchor Unsalted Butter
- 2 tablespoons Five Roses all-purpose flour
- 1 cup
Full Cream milk
- 1/4 teaspoon nutmeg (optional)
- Salt and pepper to taste
Directions
- Blanch the spinach in boiling water for 1-2 minutes. Drain and squeeze out excess moisture. Chop coarsely. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes
- Gradually whisk in the milk and cook until the mixture thickens, stirring constantly
- Add the chopped spinach and nutmeg (if using) to the sauce. Cook for a few more minutes until heated through
- Season with salt and pepper to taste
