Creamed Spinach

Ingredients

  • 2 pounds fresh spinach, washed and trimmed
  • 2 tablespoons Anchor Unsalted Butter
  • 2 tablespoons Five Roses all-purpose flour
  • 1 cup Full Cream milk
  • 1/4 teaspoon nutmeg (optional)
  • Salt and pepper to taste

Directions

  1. Blanch the spinach in boiling water for 1-2 minutes. Drain and squeeze out excess moisture. Chop coarsely. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes
  2. Gradually whisk in the milk and cook until the mixture thickens, stirring constantly
  3. Add the chopped spinach and nutmeg (if using) to the sauce. Cook for a few more minutes until heated through
  4. Season with salt and pepper to taste
