Cherry Coconut Barfi

Ingredients
- 2 cups maraschino cherries chopped 2 cups desiccated coconut 1 cup granulated sugar 1/2 cup condensed milk 1/4 cup unsalted butter 1/4 cup evaporated milk 1 teaspoon vanilla extract

- Step 1: Prepare the Cherry Coconut Mixture In a heavy-bottomed pan, melt the unsalted butter over low heat. Add the chopped cherries and cook them for about 5 minutes, or until they become soft and release their juices. Stir frequently to prevent sticking. Add the desiccated coconut to the pan and continue cooking for another 5-7 minutes. The coconut should turn a light golden color and become aromatic. Stir in the granulated sugar, condensed milk, and evaporated milk. Keep stirring the mixture continuously over medium heat. It will start to thicken and come together as it cooks. Continue cooking and stirring until the mixture begins to pull away from the sides of the pan. This should take approximately 10-15 minutes. Add the vanilla extract and mix it into the cherry coconut mixture. Step 2: Set the Barfi Prepare a square or rectangular baking dish by greasing it with a little butter or lining it with parchment paper. Pour the hot Cherry Coconut mixture into the prepared dish and spread it evenly. If desired, garnish the top with slivered almonds or chopped pistachios, pressing them gently into the mixture. Step 3: Allow to Cool and Set Let the Cherry Coconut Barfi cool at room temperature for about an hour. Once it has cooled down, cover the dish with plastic wrap and place it in the refrigerator for 2-3 hours or until it sets completely. Step 4: Cutting and Serving After the Cherry Coconut Barfi has set, remove it from the refrigerator. Run a knife around the edges to loosen it from the dish.
