Cornbread

Ingredients

  • 1 cup cornmeal
  • 1 cup Five Roses flour
  • 1/4 cup granulated sugar (adjust to taste)
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup Full Cream milk
  • 1/4 cup unsalted Anchor butter, melted
  • 2 large eggs

Directions

  1. Preheat your oven to 425°F (220°C). Grease an 8x8 inch baking dish or a similar-sized oven-safe dish.
  2. In a large mixing bowl, combine the cornmeal, flour, sugar, baking powder, and salt. Mix well. In a separate bowl, whisk together the milk, melted butter, and eggs.
  3. Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix; a few lumps are okay. Pour the batter into the greased baking dish, spreading it evenly.
  4. Bake in the preheated oven for approximately 20-25 minutes, or until the top is golden brown and a toothpick inserted into the centre comes out clean. Allow the cornbread to cool slightly before slicing and serving.
