Sweet Bread With Cinnamon

Ingredients
- 2 ½ cups grated coconut
- 1 ½ cup melted Anchor butter
- 5 cups Five Roses flour
- 2 tbs shortening
- 1 ½ tbsp baking powder
- 1 ½ tsp salt
- 1 cup sugar
- 1 cup raisins
- 3 eggs beaten
- 1 ¼ cups
Evaporated Milk
- 2 tbs mixed essence
- 1 tsp nutmeg
- ½ tsp cinnamon
- ½ cup of chopped cherries
- Coconut chips
- Slivered almonds
- Chia seeds
- Mixed Berries or Fruit of your Choice
Directions
- In a large mixing bowl add all of the flour, baking powder, and salt
- Melt the butter in a saucepan
- In another bowl mix the coconut, the majority of the sugar, raisins, cherries, eggs,
- Evaporated Milk, mixed essence, nutmeg, cinnamon and melted butter
- Mix well until you have a creamy paste
- Add this to the bowl with the flour, baking powder, and salt
- Mix until you form a stiff dough
- Now divide the mixture into your baking tins
- Boil water
- Mix 2 tbsps of sugar, with the hot water and brush the top of each loaf
- Bake in the oven for 1 hour
- Let cool before serving
